Creamy Chicken with Rice

So easy and great for busy nights. When I was growing up there were a few things that were staples in our house. Chicken and rice casserole was one of them. My mom would mix a can of cream of mushroom soup, milk, rice, and lots of poultry seasoning together. Top with chicken breasts and bake until everything was done.

Total Time 30 minutes. My mother in law makes it for her and she loves it and I really wanted to learn how to make a good dish for her. I love this recipe. I have found some ovens need more time, but this is a pretty good average!

Also cut back a little on the broth because I used jasmine rice. I am so glad you liked it Kelsey. Microwaving chicken and rice casserole often dries it out. I am going to try this out.

Now THIS is comfort food! It is packed with hearty chicken, in a creamy sauce, with tender rice and a perfectly crispy cracker crust. I was a skeptic about this recipe at first. No garlic, no onion, not even any salt and pepper, people. I was absolutely certain that this would not be very good. This dinner is the epitome of comfort food and has become one of our go to recipes throughout the years and inspired me to make many more recipes like it! It is simple and easy to make, and I think that is just what makes it so good.


My only deviation from the recipe was to use 2 cups of shredded chicken that I had handy versus using raw chicken. I want to save a trip to the grocery store. Freeze for up to 3 months. I will be trying this recipe today, I will be adding changes though.

Spread the cracker mixture over the top of the casserole, then place in the middle rack of the oven and bake for 40 minutes.

Also, I prefer shiitake mushrooms which have to be cooked differently than noted. Tex-Mex Beef and Rice Skillet. Servings 4. What a delicious idea?
