This meat free lasagna is great for a family get together, a dinner party or a weekly meal prep. You can make it ahead of time and serve later in the week or it will keep in the freezer for a good months. Made totally from scratch well apart from the pasta sheets that is , this dish has become another firm family favourite. When I was making up the recipe for this vegan lasagna in my head, I wanted to create a cheesy-like sauce without nuts.

I used almond flour and a tablespoon of almond fdee. Definitely going to add this to our regular meals. I love agar in cheese sauces. I used a can of salt free diced tomatoes no garlic and a T of tomato paste no garlicwith 2 T of fresh b.
VEGAN LASAGNA - Tofu Ricotta, Nut Free, Dairy Free
Turns out perfect every time. As I read this recipe I thought about a combination of the zucchini slices and the tofu slices in alternating layers as a way to make it a little more filling! I want to say that in the process of cooking this I ended up cutting a large chunk of my finger on the mandolin. I prefer this version more then vegrtable version with eggplant, my parents also enjoyed this meal. Have already forwarded this recipe to my fellow vegetarians and vegans.
I hope you guys had an awesome Christmas? We ate a disturbing amount of food, drank a very disturbing amount of red wine and ended the night with a drunken reading of a play my nephew wrote for school he won an award for it! Then we all passed out on the living room couches and had the teenagers drive us home. It is very handy to have a bunch of teenagers with licenses! And now I just am keeping the ball rolling with the serious eating I guess.
